Beth Lewis serves as a Clinical Assistant Professor of Nutrition within the College of Health Solutions, where she brings her expertise in the field of medical nutrition therapy, clinical nutrition, nutrition support, malnutrition, and diabetes. Since assuming her teaching role in January 2024, Beth has been instrumental in sharing valuable knowledge and skills to students, equipping them to navigate the complexities of nutritional science with confidence.
Beth's passion for diabetes management is evident in her role as a Certified Diabetes Care and Education Specialist, a credential that underscores her commitment to enhancing the lives of individuals with this condition. Whether within the classroom or the broader community, Beth finds fulfillment in educating others on effective strategies for diabetes management, fostering empowerment and improved health outcomes.
Prior to her tenure as a clinical professor, Beth had over two decades of hands-on experience as a Clinical Nutrition Manager in the hospital setting. Her extensive background includes critical care nutrition, patient education and counseling, medical management, nutrition support, interdisciplinary collaboration, quality metrics, software interfacing, and food service management. This experience has refined her ability to address diverse nutritional challenges with evidenced based practice and compassion.
