Johnston is an expert in vitamin C metabolism, the medicinal use of vinegar, high protein diets, and vegetarian nutrition. She is the associate dean for faculty success in the College of Health Solutions.

Bean applies bioanalytical chemistry methods to characterize microbial, human, animal, plant, and soil metabolomes to identify biomarkers of health and disease.

Emily is using comprehensive two-dimensional gas chromatography coupled to time-of-flight mass spectrometry (GC×GC-TOFMS) to investigate volatile biomarkers for diagnosing disease. 

Kim’s research focuses on the effect of diet-gene interactions on the development of obesity and metabolic syndrome.
